Salmon and tuna sushi with shallot and wasabi mayonnaise

Ingredients : Sushi:
50 g shallot
75 g tuna fillet
75 g salmon fillet
1 stick of celery
1 lemongrass stem
25 g Kikkoman soy sauce
15 g ginger syrup
½ cucumber
4 sheets of nori (edible seaweed)
200 g sushi rice

Wasabi mayonnaise:

50 g shallot
juice of ½ lime
½ dl white wine vinegar
25 g wasabi
25 g egg yolk
40 gram honey
1 ½ dl olive oil
salt and pepper
Preparation :
How to prepare : Preparation sushi:
Peel and halve the shallot and chop finely. Cook the sushi rice (follow the instructions on the packet) with some salt, the chopped shallot and the crushed stem of lemongrass. Tip the rice into a colander, drain and leave to cool. Mix the kikkoman with the ginger syrup. Slice the cucumber and celery into thin slices and marinate for 10 minutes in the kikkoman dressing. Slice the salmon and tuna into long strips of 1 x 1 cm. Season with some salt and pepper and place in the kikkoman dressing to marinate for 10 minutes.Lay the nori onto a special sushi rolling mat or a sheet of cling film. Spread some rice evenly over the sheet of nori. Lay the marinated salmon on top of the rice on 2 of the sheets and the marinated tuna on the other 2 sheets. Divide the slices of cucumber over the filings. Leave a space of rice above and below the filling. Roll the nori and filling up tightly using the rolling mat to create a roll. Place the sushi rolls in the fridge to firm up for 10 minutes. Then slice the rolls across into equal, thick pieces using a sharp moistened knife.

Preparation wasabi mayonnaise:
Peel and halve the shallot and chop finely. Mix together the honey, lime, vinegar, wasabi, finely chopped shallot, yolk and salt and pepper. Mix the ingredients well until everything is smooth, then add the oil drop by drop. Beat until the sauce has the consistency of mayonnaise. This spicy mayonnaise tastes delicious with the sushi.
